If you are choosing your first serious Japanese carbon-steel knife and want the one-line answer: buy Aogami #2, sold in English as Blue #2. It takes the same high-carbon recipe as Shirogami #2, sold as White #2, and adds a measured dose of A metal added to steel that forms especially hard wear-resistant carbides; it improves edge holding at a slight cost to sharpening ease., which buys meaningfully longer edge retention for a small tax at the sharpening stones. It is also the cheaper ticket in: well-regarded Blue #2 knives start at $115, while serious White #2 starts around $199.

Buy White #2 instead if you sharpen your own knives and enjoy it. It is the purer steel, it reaches a slightly keener apex, and it is among the easiest steels of any kind to sharpen. Either way, know what you are signing up for: both are fully reactive carbon steels. Both will develop a A protective layer of stable black iron oxide that builds on carbon steel with use; a sign of a well-kept blade, not damage., both will rust if left wet, and neither forgives a night in the sink. The care routine, not the alloy sheet, is the real decision.

What Actually Separates Them

Both steels come from one Japanese producer, Hitachi Metals (now Proterial), and share the same backbone: roughly 1.05% carbon, hardened in finished knives to 61 to 64 Rockwell C, the standard hardness scale for blade steel. Most kitchen knives fall between about 56 and 66.. White #2 is the minimalist expression of that recipe: carbon, a whisper of silicon and manganese, and impurities controlled to almost nothing (0.025% phosphorus, 0.004% sulfur). There is no tungsten and only a trace of chromium. Its closest Western analog is the old American W2 tool steel, held to a purity standard few Western mills ever matched.

Blue #2 is that same steel with two additions: 0.75% tungsten and 0.35% chromium. The tungsten is the point. It forms tungsten Microscopic hard particles within steel. They boost wear resistance, but large ones can blunt the very finest edge. that resist wear far better than the plain iron carbide in White steel, which is why Blue #2 holds a working edge noticeably longer, approaching what high-end stainless can do. The chromium sounds like it should matter for rust, but at 0.35% it does not: its practical effect on corrosion is minimal, and Blue #2 is every bit as reactive as White.

What White #2 gets in exchange for its purity is the finest possible edge structure. Its hardness comes from Iron carbide, the fine hard particles in plain carbon steel; they polish to a very keen apex., and that fine structure is why the steel takes such a scary-keen apex and gives it up to the stones so willingly. The gap is small; this site rates them identically on edge retention, toughness, and sharpening ease, because the differences are matters of feel and cadence rather than category. But the differences are real: Blue cuts longer, White sharpens keener and faster.

In the Kitchen

Start with what they share, because it dominates ownership: these are reactive steels. Cut an onion, wipe the blade. Wash the knife, dry it immediately, every time. Within the first weeks the steel will darken into a patina; that gray-blue mottling is protective and traditional, not damage. Skip the drying and either steel will greet you with orange rust by morning. If that sounds like more relationship than you want with a kitchen tool, buy a good stainless instead; the care guide is blunt about what reactive ownership requires.

If the routine sounds fine, both steels reward it lavishly. White #2 is a precision instrument for all fine cutting: the gyuto (the Japanese chef's knife), the santoku, the nakiri (a rectangular vegetable knife), slicers, and paring knives. Blue #2 covers the same ground and extends into traditional single-bevel knives, the Japanese blades ground on one side only for fish and sushi work, where it is a standard artisan choice. In hand, the difference shows up as cadence: a Blue #2 gyuto run at 63 HRC keeps its working edge through more prep sessions before it asks for the stones, while a White #2 blade asks a little sooner and answers with an edge that feels a shade keener when fresh.

Toughness is a wash. Both are rated the same here, both tolerate normal kitchen work without chipping, and when hard carbon steel like this does fail, it chips under sideways stress rather than rolling. Let the edge do the work and keep both away from twisting and prying.

Sharpening and Care

This is where White #2 makes its case. It is among the easiest steels to sharpen, period: the fine cementite structure raises a burr on any quality whetstone almost immediately, and a 1000, 4000, 8000 grit waterstone progression takes it to a polished apex in minutes. Sharpening White steel is the experience stone enthusiasts mean when they say they love carbon steel.

Blue #2 is nearly as pleasant, just more deliberate. The tungsten carbides ask for modest extra effort, though far less than any modern powder-metallurgy stainless; a 1000, 3000, 6000 progression is the standard protocol, and the steel responds beautifully to a leather strop loaded with chromium oxide compound for the final apex. Between sharpenings, maintain both with a smooth honing rod or a bare strop rather than a grooved steel, which is too aggressive for edges this hard and keen.

Care is identical, and identical means identical: the chromium in Blue #2 changes nothing about the routine. Wipe during use. Dry immediately after washing. Wipe with camellia oil, the traditional Japanese blade oil, before any storage longer than a few days. Iron-clad knives, where soft reactive iron is forged around the hard steel core, will patina dramatically across the whole blade face; stainless-clad versions confine the reactivity to the exposed edge and make the gentler on-ramp for a first-time carbon owner. Who Makes Knives in Each

White #2 may be the most democratic steel in Japanese artisan knifemaking. The Gesshin Ginga 210mm gyuto ($265), ground ultra-thin from a single piece of White #2 by Ashi Hamono in Sakai, is the benchmark reviewers use to judge everything else. Yoshikane Hamono in Sanjo, forging since 1919, offers a hammered kurouchi gyuto (kurouchi is the rustic finish that leaves dark forge scale on the upper blade) at $286. Hatsukokoro gets you into Sakai-made White #2 at $200, and the Masakage Yuki gyuto at $345 wraps a White #2 core in stainless cladding, a friendly setup for a first carbon knife.

Blue #2's range is even wider. Kyohei Shindo's Tosa kurouchi gyuto at $115 is the accessible entry into the whole Hitachi carbon world. The stainless-clad hammered gyutos from Anryu Hamono in Echizen ($240, run at 63 HRC) are the community's reference for performance per dollar. Gihei Hamono builds a fine Blue #2 nakiri in Tsubame-Sanjo ($180). Which One Should You Buy

Buy Blue #2 if you are buying one carbon knife to cook with daily and want the longest stretch between sharpenings; if you are new to carbon steel and want the cheapest serious entry, which the $115 Shindo is; or if your interests run toward traditional single-bevel knives. It is the best all-around answer in the Hitachi carbon family, which is much of why so many Japanese smiths build on it. If even Blue #2's edge retention leaves you wanting, the more heavily alloyed Aogami Super is the next step up that same ladder.

Buy White #2 if you own waterstones and like using them; if the keenest possible edge matters more to you than how long it lasts; or if the knife you fell for happens to be one of the White #2 benchmarks like the Gesshin Ginga, because the grind and the maker's skill will do more for your cooking than the tungsten ever will.

And a caution that applies to both: if you will not dry a knife the moment you finish washing it, buy neither. A stainless steel like VG-10 will serve you better than a rusting masterpiece. But if the ritual appeals to you, you cannot make a bad choice here.
