The Verdict
If two knives sit in front of you at the same price, from makers equally skilled with each steel, buy the CPM MagnaCut. It holds an edge longer, shrugs off moisture more completely, and tolerates hard use at high hardness in a way S35VN cannot match. That is not a controversial call: MagnaCut was designed, twelve years later, to be exactly this upgrade.
The interesting question is what to do when the situation is not that clean, because it usually is not. S35VN knives are routinely $100 or more cheaper, the steel has fifteen-plus years of makers who know precisely how to heat-treat it, and in a kitchen it gives up less of MagnaCut's advantage than the spec sheet suggests. Both answers below are honest ones.
What Actually Separates Them
Both steels come from Crucible Industries in the United States, and both are made with A process that atomizes molten steel into a fine powder before pressing it into a billet, producing very fine, evenly distributed carbides., the process that gives modern premium steels their fine, even grain. The family resemblance is real: S35VN's signature move in 2009 was adding a half percent of A metallic element added in small amounts to refine carbide size, producing a tougher, finer-grained steel. to refine the carbide structure of its predecessor S30V. MagnaCut, designed by metallurgist Larrin Thomas in 2021, took that idea to its logical conclusion.
The difference is what the niobium is asked to do. In S35VN it is a seasoning: the steel still relies on chromium and vanadium Microscopic hard particles within steel that resist wear. Their size limits how fine an edge can get, so smaller carbides allow a keener, more durable apex. for wear resistance, and forming chromium carbides consumes chromium that would otherwise be fighting rust. MagnaCut inverts the recipe. Its 2% niobium forms nearly all of the hard carbides, leaving its chromium dissolved in the steel where it fights corrosion full-time. That is how a steel with 10.7% chromium out-resists one with 14%: on paper S35VN is the more stainless alloy, but in practice MagnaCut behaves like steels carrying 15% or more.
The same trick explains the toughness gap. Niobium carbides are smaller and harder than chromium carbides, so a MagnaCut edge has fewer of the concentrated stress points where chips start. In the Kitchen
Kitchen use narrows the gap, and it is worth being honest about why. A kitchen knife lives in a wet environment but cuts soft things on wood or plastic. It rarely sees the lateral abuse that makes toughness decisive in outdoor knives, and it gets rinsed and dried (or should) before corrosion has a real chance. S35VN's "good, not great" corrosion resistance is entirely adequate for a cook who dries the blade; its toughness at 60 to 61 Rockwell C, the standard hardness scale for blade steel. Most kitchen knives fall between about 56 and 66. is more than a cutting board will ever test.
Where MagnaCut's advantages stay meaningful is geometry and neglect. Because the steel is so tough at 62 to 64 HRC, makers can grind MagnaCut thinner behind the edge than they would dare with most stainless, and thinner geometry is the single biggest upgrade in how a knife actually cuts. And if you are the sort of cook who leaves a knife wet in the sink overnight, MagnaCut forgives what S35VN will eventually punish with pepper spots.
Sharpening and Care
Neither steel belongs on a cheap aluminum-oxide stone, but S35VN is the more forgiving of the two: quality synthetic waterstones raise a burr on it without drama, and its slightly lower working hardness means fewer strokes to reset an edge. MagnaCut wants diamond stones or premium synthetics (Shapton Glass and Naniwa's harder lines are the usual recommendations), and at 62 to 64 HRC it makes you earn the edge. The consolation is cadence: MagnaCut needs the stones less often, and between sharpenings both steels maintain well with a ceramic rod or a leather strop rather than a steel honing rod.
Care is where MagnaCut is simply easier. Both are fully stainless for practical purposes: rinse, dry, store. But MagnaCut's margin for error is wider, and it will tolerate an acidic prep session or a damp knife block that would slowly stain S35VN.
Who Makes Knives in Each
Both steels live almost entirely in the American artisan and small-shop world, which is where this site recommends buying anyway. MagnaCut has become the default flagship steel for a generation of small makers: Meglio Knives, Doberman Forge, Vertex Bladeworks, and North Arm Knives all build gyutos and Western chef knives in it, with Warther Cutlery offering one of the most affordable serious MagnaCut kitchen knives made. S35VN's builder pool is older and broader; New West KnifeWorks has built its kitchen line on it for years, and shops like Soul Built turn out S35VN gyutos at prices MagnaCut rarely touches. One buying caution applies to the newer steel: MagnaCut rewards precise heat treatment, ideally 62 to 64 HRC with Cryogenic treatment: chilling the blade far below room temperature after the quench to convert leftover soft austenite into hard martensite., and a maker still learning it can ship a blade that performs below a well-executed S35VN. Fifteen years of S35VN production means almost nobody gets S35VN wrong anymore. Buy MagnaCut from makers with a documented track record in it, not from whoever added the word to a product title first.
Which One Should You Buy
Buy MagnaCut if you want the best available all-around stainless and the price difference does not sting; if you love thin, hard, high-performance grinds; if your knives sometimes sit wet; or if you sharpen rarely and are happy to own diamond stones for the occasions you do.
Buy S35VN if you find a well-made knife at $200 to $300, because that remains one of the best price-to-performance buys in the premium tier; if you sharpen your own knives and prefer a steel that cooperates on ordinary waterstones; or if the MagnaCut option in front of you comes from a maker with no visible history in the steel. A proven S35VN blade beats an unproven MagnaCut one.
And if you already own a good S35VN kitchen knife: keep it. MagnaCut is the better steel, but it is an upgrade of degree, not of kind, and a skilled maker's S35VN will outperform a mediocre maker's MagnaCut every day of the week.
